Ingredients:

Mild Italian sausage 1/4 lb
Italian seasoning 1/4 teaspoon
Green pepper, seeded and diced 1/2
Small white onion, diced 1/2
Salt To taste

Refrigerated crescent rolls 1 (8-oz) can
Pizza sauce 1/2 cup
Shredded mozzarella cheese 1/2 cup (2 oz)
Mini pepperoni slices 1/4 cup

Instructions:

  1. Preheat Oven & Cook Sausage: Preheat your oven to 375˚F (190˚C). In a skillet, brown the mild Italian sausage over medium heat for about 10 minutes, breaking it up as it cooks. Drain any excess fat.
  2. Sauté Vegetables: Add the diced green pepper, diced small white onion, salt, black pepper, and Italian seasoning to the skillet with the sausage. Cook for about 6-8 minutes, stirring occasionally, until the onion becomes soft and translucent.
  3. Prepare Crescent Roll Cups: Line 8 slots of a standard cupcake pan with individual crescent roll triangles. Gently manipulate the dough until it forms a small crust that evenly covers both the sides and the bottom of each cupcake slot.
  4. Assemble Pizza Cupcakes: Spoon some of the cooked sausage mixture into each crescent roll cup. Follow with a spoonful of pizza sauce. Then, add some shredded mozzarella cheese and finish by topping each with mini pepperoni slices.
  5. Bake: Bake for 16-18 minutes, or until the cheese is melted and bubbly, and the crescent roll crusts have turned a golden brown.
