Red Onion (peeled and cut into 1-inch chunks) 1/2 medium
Italian Seasoning 1 1/2 teaspoons
Garlic (minced) 2 – 3 cloves
Carrots (peeled and sliced into 1/4-inch-thick slices) 2 medium
Olive Oil 2 tablespoons
Broccoli Crown (cut into small florets) 1 medium
Bell Peppers (cored, chopped into 1-inch pieces) 2 medium (e.g., 1 red, 1 yellow)
Grape Tomatoes (optional) 1 cup
Zucchini (ends trimmed, sliced and cut into 1/2-inch pieces) 1 small
Salt To taste
Freshly Ground Black Pepper To taste
Fresh Lemon Juice 1 tablespoon

Instructions:

  1. Preheat oven: Preheat your oven to 400 degrees F (200 degrees C).
  2. Prepare vegetables: On a 13-inch rimmed baking sheet, add the bell peppers, zucchini, broccoli florets, carrots, and red onion chunks.
  3. Add oil and seasonings: Drizzle the olive oil over the mixed vegetables. Sprinkle with Italian seasoning, freshly ground black pepper, minced garlic, and salt.
  4. Toss to combine: Toss all the vegetables thoroughly until they are evenly coated with the oil and seasonings.

  6. Add tomatoes: Remove the baking sheet from the oven. If using, add the grape tomatoes to the roasted vegetables and toss until well mixed.
