Magic Lemon Pie

This classic lemon pie is a delightful combination of tart lemon flavor and a sweet, meringue topping.

Ingredients:

Ingredient Quantity
Sweetened Condensed Milk 1 can (14 ounces)
Lemon Juice 1/2 cup
Lemon Zest or Extract 1 teaspoon
Eggs (separated) 2
Graham Cracker or Baked Pie Crust 8 or 9 inches
Cream of Tartar 1/4 teaspoon
Sugar 4 tablespoons

Instructions:

  1. Preheat oven: Preheat oven to 325°F (165°C).
  2. Make filling: In a medium bowl, combine sweetened condensed milk, lemon juice, lemon zest or extract, and egg yolks. Stir until thickened.
  3. Prepare crust: Pour filling into cooled graham cracker or baked pie crust.
  4. Make meringue: In a medium bowl, beat egg whites and cream of tartar at high speed until soft peaks form. Gradually add sugar, one tablespoon at a time, beating on medium speed for 4 minutes or until sugar is dissolved and firm, shiny peaks form.
  5. Top pie: Spread meringue over pie, sealing carefully at the edge of crust to prevent shrinkage.
  6. Bake: Bake for 12-15 minutes, or until meringue is lightly browned.
  7. Cool and serve: Let cool before serving. Keep leftovers covered in the refrigerator.
