Ingredients:
Ingredient | Amount |
---|---|
Pitted peeled peaches or nectarines | 4 cups |
Seeded orange | 2 cups |
Cranberries | 1 cup |
Lemon juice | 1 tablespoon |
Ground cinnamon | 1 teaspoon |
Ground nutmeg | 1/2 teaspoon |
Ground cloves | 1/2 teaspoon |
Granulated sugar | 5 cups |
Water | 1 cup |
Liquid fruit pectin | 1 pouch (6 ounces) |
Instructions:
- Prepare the Fruit Mixture: In a large, deep stainless steel saucepan, combine the peaches, oranges, cranberries, lemon juice, cinnamon, nutmeg, and cloves. Stir in the sugar and water, ensuring everything is well blended.
- Bring to a Boil: Over high heat, bring the mixture to a full rolling boil that cannot be stirred down. Stir frequently to prevent scorching. Once boiling, quickly add the liquid fruit pectin, stirring vigorously.
- Boil and Skim: Return the mixture to a full rolling boil. Boil hard for 1 minute, stirring constantly to evenly distribute the spices. Remove from heat and skim off any foam that may have formed.
- Jar the Jam: Ladle the hot jam into prepared jars, leaving 1/4-inch headspace at the top. Wipe the jar rims clean and apply the lids until fingertip tight.
- Process and Cool: Process the filled jars in a boiling water canner for 10 minutes. After processing, let the jars cool on a rack for 24 hours before checking the seals. Store in a cool, dry place.
