3-Ingredient Slow Cooker Italian Chicken

This 3-Ingredient Slow Cooker Italian Chicken is a legendary “dump-and-go” recipe that proves you don’t need a long grocery list to make a flavorful meal. The vinegar and herbs in the Italian dressing act as a natural tenderizer for the chicken, while the Parmesan cheese melts into the juices to create a savory, slightly salty sauce. It’s the perfect protein base for meal prepping or a busy weeknight dinner.

Ingredients:

THE CORE INGREDIENTS AMOUNT
Chicken breasts (boneless, skinless) 2 lbs
Italian salad dressing 1 cup
Parmesan cheese, grated 1/2 cup

Directions:

Step 1: Prep the Slow Cooker: Lightly grease the inside of your slow cooker with cooking spray or a dash of oil to prevent the cheese from sticking to the sides.

Step 2: Layer the Chicken: Place the 2 lbs of chicken breasts in a single layer at the bottom of the slow cooker. If they overlap slightly, that’s fine, but a single layer ensures even cooking.

Step 3: Whisk and Pour: In a small bowl, whisk together the 1 cup of Italian dressing and 1/2 cup of Parmesan cheese. Pour this mixture over the chicken, using a spoon to make sure every inch of the meat is coated.

Step 4: Slow Cook: Cover and cook on LOW for 4/6 hours or on HIGH for 2.5/3.5 hours. You’ll know it’s ready when the chicken reaches an internal temperature of 165°F and pulls apart easily.

Step 5: Shred and Soak: Use two forks to shred the chicken directly in the pot. Stir the shredded meat back into the warm dressing and cheese mixture so it can soak up all those zesty flavors.

Step 6: Serve: Taste the sauce and add a crack of black pepper if desired. Serve the chicken over a bed of pasta, steamed rice, or even inside a toasted sub roll for an Italian-style sandwich.
