Blueberry Cream Cheese Bread

Ingredients:

Fresh blueberries 1 cup
All-purpose flour 1/1/2 cups
Granulated sugar 1/2 cup
Brown sugar 1/4 cup
Salt 1/2 teaspoon
Baking powder 1/2 teaspoon
Baking soda 1/4 teaspoon
Unsalted butter, softened 1/2 cup
Cream cheese, softened 4 ounces
Large eggs 2
Vanilla extract 1 teaspoon
Milk 1/2 cup

How To Make Blueberry Cream Cheese Bread:

Step 1: Preheat and Prep: Preheat your oven to 350F (175C) and grease a 9×5 inch loaf pan. In a medium bowl, toss the 1 cup blueberries with 1 tablespoon of the flour to coat (this prevents sinking).

Step 2: Whisk Dry Ingredients: In a large bowl, whisk together the remaining 1 1/2 cups flour, 1/2 cup granulated sugar, 1/4 cup brown sugar, 1/2 teaspoon salt, 1/2 teaspoon baking powder, and 1/4 teaspoon baking soda.

Step 3: Beat Wet Ingredients: In another bowl, beat the 1/2 cup softened butter and 4 ounces softened cream cheese together until smooth and creamy. Add the 2 eggs, one at a time, beating well after each addition. Stir in the 1 teaspoon vanilla extract.

Step 4: Combine Batters: Gradually add the dry ingredients to the wet ingredients, alternating with the 1/2 cup milk, beginning and ending with the dry ingredients. Mix until just combined.

Step 5: Fold and Pour: Gently fold in the floured blueberries. Pour the batter into the prepared loaf pan and spread it evenly.

Step 6: Bake and Cool: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
