- Cook the Chicken and Onion: In a large pot, heat the 1 tablespoon olive oil over medium heat. Add the diced 1 ½ pounds of chicken and the chopped 1 medium onion. Sauté for 5–7 minutes, or until the chicken is cooked through. Sprinkle the 1 ½ teaspoons of granulated garlic powder over the chicken and onion while they cook.
- Simmer the Chili Base: Add the drained 3 cups of beans, 1 ¾ cups of corn, 2 cups of chicken broth, ⅔ cup of chopped green chiles, the optional 4 ounces of cubed cream cheese, and all the spices (1 teaspoon salt, 1 teaspoon cumin, 1 teaspoon oregano, ½ teaspoon black pepper, and ¼ teaspoon cayenne pepper). Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes, stirring occasionally.
- Create the Creamy Finish: Remove the pot from the heat. In a small bowl, whisk together the ½ cup sour cream and ½ cup heavy cream until smooth. Ladle about ½ cup of the hot broth from the pot into the sour cream mixture and whisk again until it’s fully incorporated.
- Combine and Serve: Pour the sour cream and heavy cream mixture back into the pot and stir well to combine everything. Serve the chili warm, topped with your favorite garnishes.
