Ingredients:
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Prepare Chicken Breasts: Using a sharp knife, slice each chicken breast horizontally, being careful not to cut all the way through. This will create a pocket inside each breast for the stuffing.
- Stuff Chicken Breasts: Spoon the prepared cheese mixture into the pocket of each chicken breast, spreading it evenly inside.
- Wrap with Bacon: Wrap each stuffed chicken breast with two slices of bacon. Secure the bacon in place with toothpicks if necessary.
- Sear Chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, carefully place the bacon-wrapped chicken breasts in the skillet. Sear them for about 3 to 4 minutes on each side, until the bacon starts to become crispy and golden brown.
- Bake in Oven: Transfer the skillet with the seared chicken breasts to the preheated oven. Bake for 20 to 25 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. The internal temperature should reach 165°F (74°C).
- Rest and Serve: Remove the skillet from the oven and let the bacon-wrapped stuffed chicken breasts rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken. Remove any toothpicks before serving. Enjoy!
