Instructions:
- Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
- Mix Cake Batter: In a large bowl, whisk together the sugar, all-purpose flour, baking soda, and salt. Then, mix in the eggs and the crushed pineapples (with their juice) until just combined. Be careful not to overmix.
- Assemble & Bake: Pour the cake batter evenly into your prepared baking pan. Evenly top the batter with the chopped pecans and sprinkle the brown sugar over them. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Make Icing: While the cake is baking, prepare the icing. In a medium saucepan, combine the evaporated milk, sugar, and 1/2 cup of unsalted butter. Place over medium-high heat and bring to a boil, stirring occasionally.
- Finish Icing & Pour: Remove the saucepan from the heat and stir in the vanilla extract. Immediately pour the hot icing evenly over the hot cake as soon as it comes out of the oven.
- Cool & Serve: Let the cake cool completely in the pan. As it cools, it will absorb the delicious icing. Once cooled, slice, serve, and enjoy your Granny Cake!
