Very ripe bananas, lightly spotted 3

Light brown sugar 2 cups
All-purpose flour 2 cups

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Combine Dry Ingredients (Cake): In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.
  3. Combine Wet Ingredients (Cake): In a separate, larger bowl, mash the three very ripe bananas. Then, stir in the room temperature butter, granulated sugar, eggs, and vanilla extract until well combined.
  4. Form Cake Batter: Alternate adding the flour mixture and milk to the banana mixture, stirring gently in between additions until just combined. Don’t overmix. Set the batter aside.
  5. Prepare Crumb Topping: In a large bowl, combine the cold, cubed butter, light brown sugar, and all-purpose flour. Mix with a fork or a pastry cutter until the mixture resembles coarse crumbs.
  6. Assemble the Cake: Pour half of the cake batter into the prepared baking dish, spreading it evenly. Top this layer with about one-third of the crumb mixture. Carefully pour the remaining half of the batter over the crumb layer, spreading it gently. Finally, sprinkle the remaining crumb topping generously over the top of the cake.
