Trisha Yearwood’s Butterscotch Bars

These Butterscotch Bars, inspired by Trisha Yearwood, are a delightful treat featuring a soft, chewy base studded with butterscotch chips and topped with a luscious peanut butter glaze. They’re easy to make and perfect for satisfying a sweet tooth or sharing with friends and family.

Ingredients:

Ingredient Quantity
Butter, at room temperature 1/2 cup (1 stick), plus more for greasing pan
Granulated sugar 1/2 cup
Light brown sugar, packed 1/2 cup
Creamy peanut butter, divided 3/4 cup
Large egg 1
Vanilla extract 1 teaspoon
All-purpose flour 1 cup
Baking soda 1 teaspoon
Salt 1/4 teaspoon
Quick-cooking oatmeal 1/2 cup
Butterscotch chips 1 cup
Powdered sugar 1 cup
Milk 4 tablespoons

Instructions:

  1. Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish generously with butter.
  2. Cream Wet Ingredients: In a large bowl, using an electric mixer, cream together the room temperature butter, granulated sugar, packed light brown sugar, and 1/2 cup of the creamy peanut butter until light and fluffy.
  3. Add Egg & Vanilla: Add the large egg and vanilla extract to the creamed mixture and mix until just combined.
  4. Combine Dry Ingredients: In a separate medium bowl, sift together the all-purpose flour, baking soda, and salt. Add the quick-cooking oatmeal and stir to combine all the dry ingredients.
  5. Combine Wet and Dry: Gradually add the flour/oat mixture to the butter mixture. Mix on low speed until just well combined, being careful not to overmix.
  6. Spread & Top: Spread the batter evenly across the prepared baking pan. Sprinkle the 1 cup of butterscotch chips evenly over the top of the batter.
  7. Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
  8. Prepare Glaze: While the bars are still warm, whisk together the powdered sugar, 4 tablespoons of milk, and the remaining 1/4 cup of creamy peanut butter in a small bowl until completely smooth.
  9. Glaze & Cool: Pour the prepared glaze evenly over the warm bars.
  10. Cool & Serve: Let the bars cool completely in the pan before slicing and serving. This allows the glaze to set and the bars to firm up.
