Traditional Scottish Tablet

Ingredients:

Granulated white sugar 4 1/2 cups
Whole milk 1 cup
Sweetened condensed milk 1 can (14 oz)
Salted butter 6 tablespoons
Vanilla extract or Whiskey (optional) 1 teaspoon / 1 tablespoon

How To Make Scottish Tablet:

Step 1: Prep the Pan: Grease and line a 9×13-inch pan with parchment paper. If you prefer thicker pieces of tablet, you can use a slightly smaller square pan.

Step 2: Dissolve the Sugar: In a large microwave-safe bowl, combine the 4 1/2 cups of sugar, 1 cup of milk, and 6 tablespoons of butter. Microwave in 30-second intervals, stirring each time, until the butter has melted and the sugar is beginning to dissolve.

Step 3: Boil and Simmer: Transfer the mixture to a very deep stockpot over medium-high heat. Bring to a boil, stirring occasionally. Once boiling, pour in the 14 oz of condensed milk and reduce heat to medium.

Warning: The mixture will expand and bubble up significantly, so ensure your pot is deep enough to prevent overflow.

Step 4: Reach the Soft Ball Stage: Reduce the heat to a simmer and keep the mixture bubbling gently for 15/20 minutes, stirring frequently to prevent burning. Remove from heat when the mixture is thick, caramel-colored, and reaches 240°F/248°F on a candy thermometer.

  • The Water Test: If you don’t have a thermometer, drop a bit of the mixture into cold water; if it forms a soft, pliable ball, it’s ready.

Step 5: The “Beat” (Crucial Step): If using vanilla or whiskey, stir it in now. Using a hand mixer, beat the mixture for 8/10 minutes (or longer if using a wooden spoon). You must beat it until it thickens and the beaters leave distinct “trails” in the pot. This crystallization process is what gives the tablet its signature grainy texture.

Step 6: Set and Score: Pour the mixture into your prepared pan. Tap the pan on the counter to level it out. After about 10 minutes of cooling, use a knife to score the surface into squares.

Step 7: Cool and Serve: Let the tablet set for at least 2/4 hours (or overnight) until completely firm. Cut along your score lines and enjoy.
