Garlic powder 1 teaspoon
Dried oregano 1 teaspoon
Soy sauce ¼ cup
Prepared coffee 1 cup
Worcestershire sauce 1 tablespoon
Onion, halved and thinly sliced 1 large white
Bay leaves 2
Cornstarch 2 tablespoons
Cold water 3 tablespoons
Black pepper, fresh ground To taste

Instructions:

  1. Heat vegetable oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, but not cooked through. Remove from the skillet and place in the slow cooker.
  2. Season the roast with garlic powder, oregano, and black pepper. Add the onions and bay leaves around the roast, and add the coffee, soy sauce, and Worcestershire sauce.
  3. Cover the slow cooker and cook on LOW power for 9 hours.
  4. After 8.5-9 hours, remove the lid and discard the bay leaves. Remove the roast and place on a plate. Discard excess grease from the crockpot.
  5. In a small bowl, combine cornstarch and cold water. Add the cornstarch mixture to the gravy and stir. Cover the slow cooker and cook on HIGH power until the gravy thickens, about 20 minutes.
  6. Shred the pot roast. Add the beef back into the gravy and stir. Serve from the crockpot. Garnish with parsley (optional).
