This is what my father-in-law requests every time he visits. He never seems to tire of it.

This Oven Baked Cheesy Sausage and Potato Bake is a simple, rustic sheet-pan meal that relies on the high heat of the oven to caramelize the sausage and crisp the potatoes. By roasting the potatoes first, you ensure they reach a perfect “fork-tender” consistency without overcooking the sausage. The melted cheddar acts as a savory glue that brings the earthy thyme and smoky meat together for a hearty, one-dish dinner.

Sausage (your favorite), sliced 1 lb
Olive oil 1 tablespoon
SEASONING & FINISH AMOUNT
Shredded cheddar cheese 1 cup
Dried thyme 1 teaspoon
Salt and black pepper To taste
Fresh parsley, chopped For garnish

Directions:

Step 1: Prep and Season the Spuds: Preheat your oven to 400°F. In a large mixing bowl, toss the cubed potatoes with the 1 tablespoon of olive oil, dried thyme, salt, and pepper. Ensure each cube is lightly coated so they brown evenly.

Step 2: The Initial Roast: Spread the potatoes in a single layer in a large baking dish or on a rimmed sheet pan. Bake for 20 minutes. You are looking for the edges to just start turning a light golden color.

Step 3: Add the Protein: Remove the dish from the oven and add the 1/2 inch sliced sausages. Give everything a good stir to distribute the sausage fats over the potatoes. Return the dish to the oven.

Step 4: Brown and Crisp: Bake for another 20/25 minutes. The sausages should have a nice brown crust, and the potatoes should be fully tender when pierced with a fork.

Step 5: The Cheesy Finish: Sprinkle the 1 cup of shredded cheddar evenly over the top. Bake for a final 5/7 minutes until the cheese is melted and bubbling.

Step 6: Garnish and Serve: Let the dish sit for 2/3 minutes to allow the cheese to set slightly. Top with fresh parsley and serve hot.
