Ingredients:
Ingredient | Quantity |
---|---|
Cooked jasmine rice (still warm) | 3 cups |
Crushed pineapple in juice | 2 (8 ounce) cans |
Brown sugar | ⅔ cup |
Vanilla extract | 2 teaspoons |
Shredded sweetened coconut | ⅔ cup |
Cool Whip, thawed | 1 (16 ounce) tub |
Instructions:
- Cook jasmine rice according to the package directions. Approximately 1 ½ cups of uncooked rice should yield 3 cups of cooked rice.
- While the cooked rice is still warm, transfer it to a large serving dish or mixing bowl.
- Add the crushed pineapple (with its juice), brown sugar, and vanilla extract to the warm rice. Mix gently until all ingredients are well combined.
- Cover the dish and refrigerate for a minimum of 1 hour to allow the mixture to chill thoroughly.
- After the rice mixture has chilled, fold in the shredded sweetened coconut and the thawed Cool Whip until everything is evenly incorporated.
- Let the Rice Hawaiian stand at room temperature for 30 minutes before serving. This allows the flavors to meld together and the texture to soften slightly.
