This is the only cake I’ll eat during Christmas time! It’s that good and easy!

This Eggnog Poke Cake is a perfect way to celebrate the holiday season. It’s a moist and flavorful cake infused with eggnog flavor, topped with a creamy eggnog pudding and whipped cream. It’s easy to make and sure to be a hit with everyone at your table.

Ingredients:

Cake Quantity
White cake mix 1 package
Eggnog 1 cup
Eggs 2
Vegetable oil ½ cup
Topping Quantity
Eggnog 2 cups
Instant vanilla pudding mix 3.4 oz
Cinnamon 1 teaspoon
Nutmeg ½ teaspoon
Whipped cream or Cool Whip 2 cups

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and 1 cup of eggnog. Beat until smooth.
  3. Pour the cake batter into the greased baking dish.
  4. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the cake bakes, prepare the topping. In a separate bowl, whisk together the remaining 2 cups of eggnog, instant pudding mix, cinnamon, and nutmeg until the mixture thickens.
  6. Once the cake is done and cooled slightly, poke holes all over the top with the handle of a wooden spoon.
  7. Pour the eggnog pudding mixture evenly over the top of the cake.
  8. Refrigerate the cake for at least 20 minutes to allow the pudding to set.
  9. Spread the whipped cream or Cool Whip evenly over the top of the chilled cake.
  10. Optionally, garnish with a sprinkle of additional cinnamon or nutmeg for an extra festive touch.
