Onion, chopped 1 medium
Garlic, minced 2 cloves
Carrots, sliced 1 cup
Celery, sliced 1 cup
Frozen peas 1 cup
Cooked egg noodles 2 cups
Cream of mushroom soup 1 can (10.5 oz)
Shredded cheddar cheese 1 cup
Milk 1/2 cup
Salt and pepper To taste
Olive oil 1 tablespoon

Instructions

  1. Prep: Preheat oven to 350°F (175°C).
  2. Brown the beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Sauté vegetables: Add chopped onion and minced garlic to the skillet. Sauté until onion is translucent. Stir in carrots, celery, and frozen peas. Cook for 5-7 minutes, or until vegetables are softened.
  4. Combine ingredients: In a large bowl, combine cooked beef and vegetable mixture with cooked egg noodles, cream of mushroom soup, milk, and half of the shredded cheddar cheese. Season with salt and pepper.
  5. Assemble casserole: Transfer the mixture to a greased 9×13-inch baking dish. Top with remaining cheddar cheese.
  6. Bake: Bake in preheated oven for 25-30 minutes, or until cheese is bubbly and golden brown.
