Baked Apple Fritters

Ingredients:

Ingredient Quantity
All-purpose flour 2 cups
Granulated sugar 1/4 cup
Baking powder 1 tablespoon
Salt 1/2 teaspoon
Ground cinnamon 2 teaspoons
Whole milk 1/2 cup
Large eggs 2
Vanilla extract 2 teaspoons (plus 1/2 teaspoon for glaze)
Diced apples (Granny Smith or Honeycrisp) 2 cups
Melted butter 2 tablespoons
For the Glaze:
Ingredient Quantity
Powdered sugar 1 cup
Milk 2-3 tablespoons
Vanilla extract 1/2 teaspoon

Instructions:

  1. Preheat Oven & Prep Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the 2 cups all-purpose flour, 1/4 cup granulated sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, and 2 teaspoons ground cinnamon until well combined.
  3. Combine Wet Ingredients: In a separate medium bowl, combine the 1/2 cup whole milk, 2 large eggs, and 2 teaspoons vanilla extract. Pour the wet ingredients into the dry ingredients and mix with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine.
  4. Fold in Apples & Butter: Gently fold in the 2 cups diced apples and 2 tablespoons melted butter until they are evenly distributed throughout the batter.
  5. Form Fritters: Drop spoonfuls of the batter onto the prepared baking sheet, shaping them into small, rustic mounds.
  6. Bake Fritters: Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown on the edges and a toothpick inserted into the center comes out clean.
  7. Prepare Glaze: While the fritters are baking, prepare the glaze. In a small bowl, whisk together the 1 cup powdered sugar, 2-3 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth and pourable. Adjust milk amount as needed to reach desired consistency.
  8. Glaze & Serve: Once the fritters are baked, allow them to cool on the baking sheet for about 5 minutes before drizzling the glaze generously over them. Serve warm and enjoy the comforting, homey goodness!

These baked apple fritters are delicious on their own or with a cup of coffee or tea.
