Mexican blend cheese (grated) | 2 cups |
Tortillas | 6 to 8 |
Olive oil | 2 tbsp (divided) |
Instructions:
- Place the sliced steak, chili powder, cayenne pepper, lime juice, and 1 tablespoon of olive oil in a zip-lock bag.
- Seal the bag and shake it to thoroughly coat the steak pieces with the spices and oil.
- Add the thinly sliced bell peppers and onion to the bag.
- Reseal the bag and shake it again to coat the vegetables with the marinade.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Pour the contents of the zip-lock bag into the heated skillet.
- Cook the steak and vegetables until the vegetables are just tender and the steak is cooked to your desired doneness.
- Warm the tortillas according to package directions.
- Serve the steak and vegetable mixture in the warm tortillas.
- Sprinkle with grated Mexican blend cheese and any optional toppings of your choice (e.g., sour cream, salsa, guacamole).
