Ingredients:

Ingredient Quantity
Sirloin steak (thinly sliced) 2 pounds
Red bell pepper (thinly sliced) 1
Yellow bell pepper (thinly sliced) 1
Green bell pepper (thinly sliced) 1
Yellow onion (thinly sliced) 1 large
Lime juice 1 tbsp
Chili powder 1/2 tsp
Cayenne pepper 1/8 tsp
Minced garlic cloves 2
Mexican blend cheese (grated) 2 cups
Tortillas 6 to 8
Olive oil 2 tbsp (divided)

Instructions:

  1. Place the sliced steak, chili powder, cayenne pepper, lime juice, and 1 tablespoon of olive oil in a zip-lock bag.
  2. Seal the bag and shake it to thoroughly coat the steak pieces with the spices and oil.
  3. Add the thinly sliced bell peppers and onion to the bag.
  4. Reseal the bag and shake it again to coat the vegetables with the marinade.
  5. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  6. Pour the contents of the zip-lock bag into the heated skillet.
  7. Cook the steak and vegetables until the vegetables are just tender and the steak is cooked to your desired doneness.
  8. Warm the tortillas according to package directions.
  9. Serve the steak and vegetable mixture in the warm tortillas.
  10. Sprinkle with grated Mexican blend cheese and any optional toppings of your choice (e.g., sour cream, salsa, guacamole).
