Ingredients:
Ingredient | Amount |
---|---|
Brown sugar | 1 cup, packed |
Cornstarch | 3 tablespoons |
Salt | 1/8 teaspoon |
Cocoa powder | 2/3 cup |
Whole milk (or 2%) | 4 cups |
Unsalted butter | 3 tablespoons |
Vanilla extract | 1 teaspoon |
Instructions:
- Mix the Dry Ingredients:
- In a medium saucepan, whisk together 1 cup of packed brown sugar, 3 tablespoons of cornstarch, 1/8 teaspoon of salt, and 2/3 cup of cocoa powder until well combined.
- Add the Milk:
- Gradually add 4 cups of whole milk to the saucepan, whisking constantly to blend with the dry ingredients. Heat the mixture over medium heat, whisking constantly until it thickens and comes to a gentle boil, about 7-10 minutes.
- Cook and Thicken:
- Once the pudding mixture reaches a boil, reduce the heat to low and cook for an additional 1-2 minutes, still whisking constantly, to thicken the pudding further.
- Add Butter and Vanilla:
- Remove the saucepan from the heat and immediately whisk in 3 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until the butter is melted and fully incorporated.
- Cool and Serve:
- Pour the hot pudding into a large bowl or individual serving dishes. To prevent a skin from forming on top of the pudding, press a piece of plastic wrap directly onto the surface of the pudding while it cools.
- Let the pudding cool to room temperature, then refrigerate for at least 2 hours or until well chilled and set.
- Once chilled, remove the plastic wrap and serve the pudding plain or topped with whipped cream, chocolate shavings, or fresh fruit.
