Ingredients:

Ingredient Amount
Brown sugar 1 cup, packed
Cornstarch 3 tablespoons
Salt 1/8 teaspoon
Cocoa powder 2/3 cup
Whole milk (or 2%) 4 cups
Unsalted butter 3 tablespoons
Vanilla extract 1 teaspoon

Instructions:

  1. Mix the Dry Ingredients:
    • In a medium saucepan, whisk together 1 cup of packed brown sugar, 3 tablespoons of cornstarch, 1/8 teaspoon of salt, and 2/3 cup of cocoa powder until well combined.
  2. Add the Milk:
    • Gradually add 4 cups of whole milk to the saucepan, whisking constantly to blend with the dry ingredients. Heat the mixture over medium heat, whisking constantly until it thickens and comes to a gentle boil, about 7-10 minutes.
  3. Cook and Thicken:
    • Once the pudding mixture reaches a boil, reduce the heat to low and cook for an additional 1-2 minutes, still whisking constantly, to thicken the pudding further.
  4. Add Butter and Vanilla:
    • Remove the saucepan from the heat and immediately whisk in 3 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until the butter is melted and fully incorporated.
  5. Cool and Serve:
    • Pour the hot pudding into a large bowl or individual serving dishes. To prevent a skin from forming on top of the pudding, press a piece of plastic wrap directly onto the surface of the pudding while it cools.
    • Let the pudding cool to room temperature, then refrigerate for at least 2 hours or until well chilled and set.
    • Once chilled, remove the plastic wrap and serve the pudding plain or topped with whipped cream, chocolate shavings, or fresh fruit.
