This Hobo Hash Brown Bake is my family’s favorite, and they can’t believe it takes so few ingredients!

Ingredients:

Ground sausage | 1 pound |
Onion, finely chopped | 1 small |
Red bell pepper, diced | 1 |
Cheddar cheese, shredded | 2 cups |
Eggs | 8 large |
Milk | 1/2 cup |
Salt | To taste |
Pepper | To taste |
Parsley, chopped fresh (optional) | 1/4 cup |
Instructions:
- Preheat oven: Set your oven to 375°F (190°C).
- Cook sausage and vegetables: In a skillet over medium heat, cook the sausage until browned and cooked through. Add the chopped onion and red bell pepper to the skillet and sauté until the vegetables are soft, about 5 minutes.
- Prepare egg mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Assemble casserole:
- Spread the thawed hash browns evenly in the bottom of a greased 9×13-inch baking dish.
- Layer the cooked sausage and vegetable mixture over the hash browns.
- Sprinkle half of the shredded cheddar cheese over the sausage mixture.
- Pour the egg mixture evenly over the casserole.
- Top with the remaining cheddar cheese.
- Bake: Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Cool and serve: Let the casserole cool for a few minutes before garnishing with chopped parsley, if desired. Serve hot and enjoy!
