This slow cooker French onion meatloaf is a classic comfort food with a delightful twist. The rich flavors of the French onion soup mix combined with the juicy ground beef create a mouthwatering dish that’s perfect for busy weeknights.

Ingredients:

Ground beef 2 pounds
French onion soup mix 1 envelope
Breadcrumbs 1/2 cup
Parmesan cheese, grated 1/2 cup
Milk 1/2 cup
Ketchup 1/2 cup
Egg 1
Onion, thinly sliced 1
Worcestershire sauce 2 tablespoons
Fresh parsley, chopped (optional) 2 tablespoons

Instructions:

  1. In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, Parmesan cheese, milk, egg, and 1/4 cup ketchup. Mix until well combined.
  2. Shape the mixture into a loaf and place it in your slow cooker.
  3. Spread the remaining 1/4 cup of ketchup over the top of the meatloaf.
  4. Layer the thinly sliced onions on top of the ketchup.
  5. Drizzle the Worcestershire sauce over the onions.
  6. Cover and cook on low for 6-7 hours, or until the meatloaf reaches an internal temperature of 160°F (70°C).
  7. Let the meatloaf rest for about 10 minutes before slicing and serving. Sprinkle with fresh parsley, if desired.
