Ingredients:

Ingredient Quantity
Ground beef 1 pound
Onion, chopped 1
Shredded hashbrowns 3 cups
Cottage cheese 1 1/2 cups
Shredded cheddar cheese 2 cups (divided)
Large eggs 6
Milk 1/2 cup
Salt and pepper To taste

How To Make Amish Breakfast Casserole:

  1. Step 1: Preheat and Cook Meat: Preheat your oven to 350°F (175°C). In a large skillet, cook the 1 pound ground beef and 1 chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  2. Step 2: Combine Base Ingredients: In a large mixing bowl, combine the cooked beef and onion mixture with the 3 cups shredded hashbrowns, 1 1/2 cups cottage cheese, and 1 1/2 cups (leaving 1/2 cup for topping) of the shredded cheddar cheese.
  3. Step 3: Prepare Egg Mixture: In a separate bowl, whisk together the 6 large eggs, 1/2 cup milk, salt, and pepper until well combined.
  4. Step 4: Assemble Casserole: Pour the egg mixture over the beef and hashbrown mixture, stirring until well combined. Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  5. Step 5: Top and Bake: Sprinkle the remaining 1/2 cup of cheddar cheese on top. Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden brown.
  6. Step 6: Serve: Let it cool for a few minutes before serving.
