- Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish.
- Combine Wet Ingredients (Blondies): In a large bowl, add the melted butter, granulated sugar, and 1/4 cup powdered sugar. Beat with an electric mixer or whisk until smooth and well combined.
- Add Eggs & Flavorings: Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, stir in the lemon zest, fresh lemon juice, vanilla extract, and the optional lemon extract, mixing until well combined.
- Combine Dry Ingredients: In a separate small bowl, sift together the flour, baking powder, and salt.
- Mix Wet & Dry: Slowly add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix the batter.
- Bake Blondies: Transfer the batter to the prepared baking dish and spread it evenly. Bake for 16-18 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with moist crumbs attached (you don’t want it completely clean for chewy blondies).
