- Preheat Oven & Prep Potatoes: Preheat your oven to 375°F (190°C). Wash and scrub the russet potatoes clean. Cut each potato into fries of your desired thickness (e.g., 1/4 to 1/2 inch thick).
- Season Fries: In a large bowl, toss the cut fries with the 3 tablespoons of melted duck fat and 1 tablespoon of Lawry’s seasoned salt. Toss until the fries are very well combined and evenly coated with the fat and seasoning.
- First Bake: Spread the seasoned fries in a single layer on a large baking sheet (you may need two, depending on your baking sheet size, to avoid overcrowding, which prevents crisping). Bake in the preheated 375°F (190°C) oven for 20 minutes.
- Second Bake for Crispness: After 20 minutes, increase the oven heat to 450°F (230°C). Continue to cook the fries for approximately 30 minutes, or until they are golden brown and wonderfully crispy. Keep an eye on them during this phase, as oven temperatures can vary.
