Green bell pepper | 1, diced |
Red bell pepper | 1, diced |
Diced tomatoes | 1 (14.5-ounce) can, undrained |
Small onion | 1, chopped |
Shredded cheddar cheese | 2 cups |

Instructions:
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni according to the package instructions. Drain and set aside.

- Add the chopped onion and bell peppers to the skillet. Cook until they are tender, about 5 minutes.
- Stir in the garlic powder, onion powder, diced tomatoes with their juice, salt, and pepper. Let the mixture simmer for about 10 minutes, allowing the flavors to combine.
- In a large mixing bowl, combine the cooked macaroni with the beef and vegetable mixture. Stir in 1 cup of the shredded cheddar cheese.
- Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheddar cheese evenly on top.
- Bake for 20 minutes, or until the cheese is melted and bubbly. Let it cool for a few minutes before serving.
