Baked Mozzarella Stuffed Meatballs

Ingredients:

Ingredient Quantity
Onion, grated 1 small
Parsley, chopped 1/2 cup
Parmesan Cheese, grated 2/3 cup
Bread crumbs 1/3 cup
Egg 1 large
Marinara sauce 2 tablespoons + 1/3 cup
Garlic, minced 3 cloves
Crushed red pepper flakes 1 pinch
Salt To taste
Pepper To taste
Ground beef 1.5-2 lbs
Mozzarella cheese, cubed (1/2 inch) 16 pieces

Instructions:

  1. Preheat oven: Position the oven rack in the lower third of the oven and preheat to 400°F (200°C).
  2. Combine ingredients: In a large bowl, combine the grated onion, chopped parsley, Parmesan cheese, bread crumbs, egg, 2 tablespoons of marinara sauce, minced garlic, red pepper flakes, salt, and pepper. Mix well.
  3. Add ground beef: Add the ground beef to the bowl and mix thoroughly with your hands until evenly combined.
  4. Form meatballs: Shape the meat mixture into 16 meatballs.
  5. Add cheese: Make a small hole in the center of each meatball. Place a cube of mozzarella cheese inside each hole. Reform the meatball around the cheese, ensuring it’s completely enclosed.
  6. Bake: Pour 1/3 cup of marinara sauce into the bottom of a baking dish. Arrange the meatballs in the dish and drizzle with a little extra virgin olive oil.
  7. Bake: Bake in the preheated oven for 15 minutes, or until the meatballs are cooked through.
