These crispy and flavorful Texas Corn Nuggets are a delightful bite-sized treat made with a combination of whole and creamed corn.

Ingredients:

Ingredient Quantity
Whole corn kernel, rinsed and drained 1 (11 oz.) can
Creamed corn 2 (11 oz.) cans
Cornmeal 1/2 cup
All-purpose flour 3/4 cup
Onion powder 1/2 teaspoon
Garlic powder 1/2 teaspoon
Kosher salt To taste
Freshly ground pepper To taste
Egg 1
Milk 3 tablespoons
Vegetable oil As needed

Instructions:

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the rinsed and drained whole corn kernels and the creamed corn. Season the corn mixture generously with kosher salt and freshly ground pepper to taste.
  3. Drop spoonfuls of the corn mixture onto the prepared baking sheet.
  4. Place the baking sheet in the freezer and chill until the corn mixture is firm and set. This will make them easier to handle for frying.
  5. In a medium bowl, whisk together the cornmeal and all-purpose flour.
  6. Whisk in the onion powder and garlic powder. Season the dry mixture generously with kosher salt and freshly ground pepper.
  7. Add the egg and milk to the dry ingredients. Stir until a smooth batter comes together.
  8. In a large Dutch oven or a heavy-bottomed pot, heat about 1 1/2 inches of vegetable oil over medium-high heat. The oil is ready when a small sprinkle of water in it sizzles immediately.
  9. Remove the chilled corn mixture from the freezer.
  10. Dip each frozen corn ball completely into the prepared batter, ensuring it is fully coated.
  11. Carefully lower the battered corn nuggets into the hot oil, being careful not to overcrowd the pot.
  12. Fry the corn nuggets for 1 to 2 minutes per side, or until they are golden brown and crispy.
  13. Remove the fried corn nuggets from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.
  14. Season the hot corn nuggets lightly with additional kosher salt, if desired.
  15. Serve hot and enjoy!
