Swedish Meatball Noodle Bake Recipe

For the Meatballs

Ground beef 1 pound
Egg, beaten 1 large
Breadcrumbs 1/2 cup
Onion, grated 1/2
Garlic powder 1/2 tsp
Ground nutmeg 1/4 tsp
Kosher salt 1 tsp
Freshly ground black pepper 1/2 tsp

For the Casserole

Egg noodles 2 1/2 cups
Beef broth 1 cup
Worcestershire sauce 1 tbsp
Heavy cream 1 pint
Swiss cheese, grated 1 1/2 cups
Fresh parsley, chopped (for serving)
Kosher salt and freshly ground black pepper To taste

Instructions:

  1. Prepare the oven and baking dish: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.

  2. Make the meatballs: In a large bowl, combine ground beef, egg, breadcrumbs, grated onion, garlic powder, nutmeg, salt, and pepper. Mix well. Form into 1 1/2 tablespoon-sized meatballs.

  3. Brown the meatballs: Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook until browned on all sides. Transfer meatballs to a plate.

  4. Cook the noodles: Cook egg noodles according to package directions, minus 2 minutes.

  5. Make the sauce: In the same skillet used to brown the meatballs, add beef broth, heavy cream, and Worcestershire sauce. Scrape up any browned bits from the bottom of the pan. Simmer for 10 minutes, or until slightly thickened. Season with salt and pepper to taste.

  6. Assemble the casserole: Layer the cooked noodles in the prepared baking dish. Top with the browned meatballs. Pour the sauce evenly over the noodles and meatballs. Sprinkle with grated Swiss cheese.

  7. Bake: Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.

  8. Rest and serve: Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley.
