Bacon and Egg Breakfast Casserole

Ingredients:

Ingredient Quantity
Bacon 8 slices
Large eggs 6
Milk 2 cups
Salt 1 teaspoon
Black pepper 1/2 teaspoon
Cubed day-old bread 4 cups
Shredded cheddar cheese 1 cup
Chopped green onions 1/4 cup

Instructions:

  1. Preheat Oven & Cook Bacon: Preheat your oven to 350°F (175°C). In a large skillet, cook the 8 slices of bacon over medium heat until they are crispy. Remove the cooked bacon and drain on paper towels. Once cooled slightly, crumble the bacon and set aside.
  2. Prepare Egg Mixture: In a large bowl, whisk together the 6 large eggs, 2 cups milk, 1 teaspoon salt, and 1/2 teaspoon black pepper until well combined.
  3. Combine Ingredients: Add the 4 cups of cubed day-old bread to the egg mixture, stirring gently to ensure the bread is evenly coated and soaks up some of the liquid.
  4. Fold in Add-ins: Fold in the crumbled bacon, 1 cup shredded cheddar cheese, and 1/4 cup chopped green onions into the bread and egg mixture.
  5. Assemble & Bake: Pour the entire mixture into a greased 9×13-inch baking dish, spreading it out evenly. Bake in the preheated oven for 40-45 minutes, or until the casserole is set in the center and the top is golden brown.
  6. Cool & Serve: Let the casserole cool for a few minutes before slicing and serving. This allows it to firm up slightly, making it easier to cut.
