Ingredients:
Ingredient | Quantity |
---|---|
Ground beef, crumbled | 1 pound |
Yellow onion, diced | 1 |
Potatoes, peeled and sliced | 3 to 4 pounds |
Cheddar Cheese, shredded | 8 ounces or more |
Cheddar Cheese soup mix | 1 can |
Evaporated milk | 12 ounces |
Milk | ½ cup |
Salt | 1 tsp |
Pepper | ½ tsp |
Non-stick cooking spray | As needed |
Instructions:
- Preheat your oven to 350°F (175°C).
- Spray a 9×13 inch baking dish with non-stick cooking spray.
- In a large skillet over medium heat, add the diced onion and crumbled ground beef. Cook until the ground beef is browned and cooked through, and the onions are softened. Drain off any excess grease from the skillet.
- Peel the potatoes and slice them into approximately ¼-inch thick slices.
- Arrange one layer of the sliced potatoes on the bottom of the prepared baking dish, overlapping slightly if necessary to cover the entire base.
- Sprinkle the potato layer lightly with salt and pepper.
- Top the potato layer with approximately one-third of the cooked ground beef and onion mixture, spreading it evenly over the potatoes.
- Sprinkle one-third of the shredded cheddar cheese over the meat mixture.
- Repeat the layering process two more times: first a layer of sliced potatoes, seasoned with salt and pepper, followed by a layer of the meat mixture, and then a layer of shredded cheese.
- The final layer should be the remaining shredded cheddar cheese.
- In a separate bowl, combine the can of Cheddar cheese soup mix, the evaporated milk, and the ½ cup of milk. Whisk until the mixture is smooth. You can add a pinch more salt and pepper to the sauce if desired.
- Pour the cheese soup mixture evenly over the top of the layered potatoes and ground beef in the baking dish.
- Cover the baking dish tightly with aluminum foil.
- Bake in the preheated oven for 1 hour.
- Carefully remove the aluminum foil from the baking dish.
- Return the uncovered dish to the oven and bake for an additional 15 minutes, or until the cheese on top is melted and has a nice golden-brown color.
- If your potato slices were thicker than ¼ inch, you may need to bake the casserole for a longer time to ensure the potatoes are fully cooked and tender. You can check for doneness by piercing a potato slice with a fork.
- Once the casserole is bubbly and the cheese is golden, remove it from the oven and let it rest for a few minutes before serving.
- Serve the Cheesy Hamburger Potato Casserole hot. Enjoy!
