Cheesy Hamburger Potato Casserole

Ingredients:

Ingredient Quantity
Crumbled ground beef 1 pound
Yellow onion, diced 1
Potatoes, peeled and sliced 3 to 4 pounds
Cheddar Cheese, shredded 8 ounces, or more
Can Cheddar Cheese soup mix 1
Evaporated milk, or whole milk 12 ounces
Milk ½ cup
Salt 1 tsp
Pepper ½ tsp

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with a non-stick cooking spray.
  2. Cook Beef and Onion: In a large skillet, add the diced yellow onion and crumbled ground beef. Cook over medium heat, stirring occasionally, until the meat is fully browned and the onion is softened. Drain any excess grease.
  3. Prepare Potatoes: While the beef is cooking, peel the potatoes and slice them to about ¼-inch thickness.
  4. Layer Casserole: Begin layering the ingredients in the prepared baking pan:
    • Place one layer of sliced potatoes on the bottom of the baking pan.
    • Sprinkle generously with salt and pepper.
    • Top with approximately ⅓ of the cooked meat mixture and spread it evenly over the potatoes.
    • Sprinkle with ⅓ of the shredded Cheddar cheese.
    • Repeat this layering process two more times (potatoes, salt/pepper, meat mixture, cheese), ending with a layer of the remaining shredded cheese on top.
  5. Prepare Sauce: In a separate bowl, combine the Cheddar cheese soup mix, the 12 ounces of evaporated milk (or whole milk), and the ½ cup of milk. You can add optional salt and pepper to this mixture if desired, to taste.
  6. Pour Sauce & Bake (Covered): Pour the prepared soup mixture evenly over the top of the layered potatoes and beef mixture in the baking dish. Cover the baking pan tightly with aluminum foil and place it in the preheated oven. Bake for one hour.
  7. Uncover & Finish Baking: After one hour, remove the foil from the baking dish. Continue to bake for an additional 15 minutes to allow the cheese topping to get golden and bubbly.
  8. Check for Doneness: If the potato slices are thicker, you may need to bake the dish longer until the potatoes are tender when pierced with a fork.
