Stupid Pie

Don’t let the name fool you! This “Stupid Pie” is a surprisingly delicious and easy-to-make dessert. With a meringue-like base, crunchy Ritz crackers, and nutty pecans, it’s a unique and satisfying treat. Topped with whipped cream, it’s a crowd-pleaser that’s perfect for casual gatherings.

Ingredients:

Egg Whites 3
Granulated Sugar 1 cup
Ritz Crackers 23
Chopped Pecans 1 cup
Vanilla Extract 1 teaspoon
Frozen Whipped Topping (Thawed) 8 oz

Instructions:

  1. Prepare the Oven and Pie Plate: Preheat your oven to 350°F (175°C). Grease a 9-inch pie plate with nonstick cooking spray or butter. Set it aside.
  2. Whip the Egg Whites: In a medium mixing bowl, use an electric mixer on low speed to beat the egg whites until they become foamy. Gradually add the granulated sugar while continuing to beat.
  3. Form Stiff Peaks: Increase the mixer speed to high and continue beating the egg whites until stiff peaks form. This means the peaks will hold their shape when the beaters are lifted.
  4. Crush the Ritz Crackers: Roughly crush the Ritz crackers. You want them to be broken into pieces, not completely turned into crumbs.
  5. Combine Ingredients: Gently fold the crushed Ritz crackers, chopped pecans, and vanilla extract into the whipped egg whites. Be careful not to deflate the egg whites.
  6. Bake the Pie Crust: Spread the mixture evenly into the prepared pie plate. Bake in the preheated oven for 25-30 minutes, or until the crust is lightly golden brown.
  7. Cool the Crust: Remove the pie from the oven and allow it to cool completely at room temperature.
  8. Add Whipped Topping: Once the crust is completely cooled, spread the thawed whipped topping evenly over the top of the pie.
  9. Chill (Optional): You can serve the pie immediately or chill it in the refrigerator for a couple of hours to allow it to set further.
