Ingredients:

Ground beef 1 pound
Bell peppers, chopped 2
Onion, finely chopped 1
Cloves garlic, minced 3
Worcestershire Sauce 1 tbsp
Low sodium beef broth (15 oz can) 1 can (15 oz)
Diced tomatoes (15 oz can) 1 can (15 oz)
Uncooked long grain white rice 1 cup
Italian seasoning 1 tbsp
Salt 1 tsp
Black pepper 1/2 tsp
Mozzarella cheese, shredded 3/4 cup
Cheddar cheese, shredded 3/4 cup

Instructions:

  1. In a large skillet, cook ground beef until mostly done. Add onions and bell peppers; cook for 5-10 minutes until softened.
  2. Add garlic to the beef mixture and cook for an additional minute until fragrant.
  3. Stir in the remaining ingredients (except cheese) and bring to a boil.
  4. Cover, reduce heat to simmer, and cook for about 20 minutes, stirring halfway through.
  5. Once rice is tender, stir in half of the cheese until melted and incorporated.
  6. Sprinkle the rest of the cheese on top, cover, and let it melt. For a quicker melt, use the broiler (if oven safe).
  7. Remove from heat and serve immediately.
