Strawberries and Cream Tres Leches

Cake:

Vanilla cake mix 1 box
Milk 1 cup
Vegetable oil 1/2 cup
Eggs 3 large
Sour cream 1/2 cup

Tres Leches Mixture:

Ingredient Quantity
Fresh strawberries, hulled and sliced 1 pint
Granulated sugar 1/4 cup
Sweetened condensed milk 1 can (14 oz)
Evaporated milk 1 can (12 oz)
Half-and-half 1 cup

Whipped Cream Topping:

Ingredient Quantity
Heavy cream 2 cups
Powdered sugar 1/4 cup
Vanilla extract 1 teaspoon
Fresh strawberries, chopped 1/2 pint (for garnish)

Equipment

  • 13×9 inch baking dish
  • Large mixing bowls
  • Potato masher or fork
  • Whisk

Instructions:

Prepare the Cake

  1. Preheat oven to 350°F (175°C). Grease a 13×9 inch baking dish.
  2. In a large bowl, combine cake mix, milk, oil, eggs, and sour cream. Mix well.
  3. Pour batter into prepared baking dish and bake for 30-34 minutes or until a toothpick inserted into the center comes out clean.
  4. Let cake cool slightly before proceeding.

Prepare the Tres Leches Mixture

  1. Mash sliced strawberries and sugar together in a medium bowl.
  2. Stir in sweetened condensed milk until smooth.
  3. Add evaporated milk and half-and-half. Mix well.

Assemble the Cake

  1. Poke holes in the warm cake using a fork or skewer.
  2. Pour strawberry milk mixture evenly over the cake. 
  3. Let cake cool to room temperature, then refrigerate for at least 2 hours.

Prepare the Whipped Cream Topping

  1. In a large bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Finish and Serve

  1. Spread whipped cream over the cooled cake.
  2. Garnish with chopped strawberries.
  3. Serve chilled.
