This hearty and comforting chicken and rice casserole is a perfect weeknight meal. It’s easy to prepare and packed with flavor.

Ingredients:

Ingredient Quantity
Raw rice (Arborio or Bomba, or regular white or brown) 1 cup
Boneless, skinless chicken breasts 3
Dry onion soup mix 1 package
Cream of mushroom soup 1 can
Onion, chopped 3/4
Water 2 cups
Salt and pepper To taste
Mushrooms, chopped (optional) 1 package
Spinach, chopped (optional) 1 bundle

Instructions:

  1. Preheat Oven: Preheat your oven to 320°F (160°C).
  2. Prepare Casserole Dish: Lightly grease a casserole dish.
  3. Layer Ingredients:
    • Add the raw rice to the bottom of the dish.
    • Top with sliced chicken breasts.
    • Add the chopped onion.
    • Optionally, add chopped mushrooms and spinach.
  4. Combine Wet Ingredients: In a bowl, combine the cream of mushroom soup, dry onion soup mix, and water. Season with salt and pepper.
  5. Pour Sauce: Pour the soup mixture over the ingredients in the casserole dish.
  6. Bake: Cover the dish and bake for 2 hours.
  7. Serve: Let cool for 10-15 minutes before serving.
