Unsalted butter, softened 1/2 cup (1 stick)

Granulated sugar 1/4 cup
Large eggs, room temperature 2
Pure vanilla extract 1 tsp
Buttermilk (or milk plus 1 tbsp vinegar) 3/4 cup
Pecan halves, chopped (plus extra for topping) 1/1/2 cups

Packed light brown sugar 1/2 cup
Heavy cream or milk 2 tbsp

How To Make Pecan Pie Muffins:

Step 1: Prep and Preheat: Preheat oven to 350F (175C). Line a 12-cup muffin tin with liners or grease well.

Step 2: Make the Batter (Dry): In a medium bowl, whisk 2 cups flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1 1/2 tsp cinnamon.

Step 3: Make the Batter (Wet): In a large bowl, beat 1/2 cup softened butter, 3/4 cup brown sugar, and 1/4 cup granulated sugar until light and fluffy (2-3 minutes). Add 2 eggs, one at a time, then 1 tsp vanilla. Mix until smooth.

Step 4: Combine and Fold: Alternately add the dry ingredients and 3/4 cup buttermilk to the wet mixture, beginning and ending with the dry. Mix just until combined. Fold in 1 1/2 cups chopped pecans.

Step 5: Fill and Top: Divide batter evenly among muffin cups. Press 2-3 extra pecan halves into the top of each muffin.

Step 6: Bake: Bake for 18-22 minutes, until a toothpick comes out clean and edges are golden. Let cool in the pan for 5 minutes, then transfer to a wire rack.

Step 7: Drizzle with Glaze: In a small bowl, whisk together the 1/4 cup melted butter, 1/2 cup brown sugar, 2 tbsp heavy cream, 1/2 tsp vanilla extract, and a pinch of salt until smooth. While the muffins are still warm, spoon or drizzle the buttery glaze over the top.
