Velveeta cheese, cubed 2 cups
Shredded pepper jack cheese 1 cup
Milk or heavy cream (optional for creamier consistency) 1/2 cup
Smoked paprika 1/2 teaspoon
Cayenne pepper (optional, for extra heat) 1/4 teaspoon
Salt and pepper To taste
Fresh cilantro, chopped (for garnish)
Tortilla chips, for serving

Instructions:

  1. Cook the Sausage: Heat olive oil in a large skillet over medium heat. Crumble sausage or chorizo and cook until browned and cooked through (about 7-8 minutes). Remove and set aside.
  2. Sauté the Vegetables: In the same skillet, add onion and jalapeño. Sauté until onion is soft and translucent. Stir in garlic and cook for an additional minute.
