Onion (diced) 1 medium
Bell Pepper (diced) 1

Grape or Cherry Tomatoes 1 pint (halved)
Garlic (minced) 4 cloves
Italian Seasoning 1 ½ tbsp
Red Pepper Flakes ¼ tsp
Black Pepper ½ tsp
Chicken Stock ¼ cup
Frozen Peas 1 cup
Shredded Mozzarella Cheese 1 ½ cups
Grated Parmesan Cheese ½ cup

Instructions:

For the Squash and Chicken

  1. Preheat the Oven: Set the oven to 375°F.
  2. Prepare the Squash: Cut, seed, and place the squash on a baking sheet with chicken breasts. Drizzle with olive oil and season with salt and black pepper.
  3. Roast the Chicken: Cook chicken until it reaches 160°F, approximately 16-20 minutes.
  4. Roast the Squash: Continue roasting the squash until the skin darkens and the flesh is easily pierced, 45-60 minutes. Set aside to cool.

For the Casserole
