This easy casserole combines all the flavors of a twice-baked potato in one pan! It’s perfect for a weeknight meal and can be easily customized with your favorite toppings.

One Pan Twice Baked Potatoes Casserole

Ingredients:

Ingredient Quantity
Russet potatoes 6 large, scrubbed
Sour cream 1 cup
Cheddar cheese, shredded 1 cup
Cooked and crumbled bacon ½ cup
Green onions, chopped ¼ cup
Butter, melted ¼ cup
Salt To taste
Pepper To taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Pierce the potatoes with a fork and bake them on a baking sheet for about 1 hour, or until tender. Let them cool slightly.
  3. Cut the cooled potatoes in half and scoop out the insides into a large bowl. Mash the potatoes lightly.
  4. Add the sour cream, cheddar cheese, bacon, green onions, melted butter, salt, and pepper to the bowl. Mix well.
  5. Spread the potato mixture evenly into the prepared baking dish.
  6. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
