One Pan Twice Baked Potatoes Casserole

Ingredients:

Russet potatoes | 6 large, scrubbed |
Sour cream | 1 cup |
Cheddar cheese, shredded | 1 cup |
Cooked and crumbled bacon | ½ cup |
Green onions, chopped | ¼ cup |
Butter, melted | ¼ cup |
Salt | To taste |
Pepper | To taste |
Instructions:
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Pierce the potatoes with a fork and bake them on a baking sheet for about 1 hour, or until tender. Let them cool slightly.
- Cut the cooled potatoes in half and scoop out the insides into a large bowl. Mash the potatoes lightly.
- Add the sour cream, cheddar cheese, bacon, green onions, melted butter, salt, and pepper to the bowl. Mix well.
