Instructions:
- Prepare Honey Garlic Sauce:
- In a small bowl, whisk together honey, minced garlic, low-sodium soy sauce, ketchup, and dried oregano.
- Assemble Chicken and Vegetables:
- Place chicken thighs, baby red potatoes, peeled carrots, and chopped onions in a 4-6 quart slow cooker.
- Pour Honey Garlic Sauce:
- Evenly pour the prepared honey garlic sauce over the chicken and vegetables in the slow cooker.
- Cooking Time:
- Cover the slow cooker and seal the lid.
- Cook on a LOW setting for 6-8 hours or on HIGH for 3-3 1/2 hours (see note).
- Add Green Beans and Optional Cornstarch Slurry:
- About 20 minutes before serving, add trimmed green beans to the slow cooker.
- Optionally, mix 2 tsp of cornstarch with 3 tsp of water to create a slurry. Add to the sauce for thickness.

- Re-seal the lid and cook for an additional 15-20 minutes until green beans are tender, and the sauce is starting to thicken.
