Ingredients

| Tomato sauce | ½ cup | Richness |
| Soy sauce | ¼ cup | Umami |

| Carrots | 5, cut into chunks | Sweetness |

Instructions
- Cook bacon: In a large pan, cook chopped bacon until crispy. Transfer to slow cooker.
- Brown beef: Season beef chunks with salt and pepper. Brown in bacon grease, 2–3 minutes per side. Add to slow cooker.
- Deglaze pan: Pour wine into hot pan, scraping up browned bits. Let bubble for 1 minute. Stir in broth, tomato sauce, soy sauce, and flour until smooth. Pour into slow cooker.
- Add vegetables & herbs: Stir in garlic, thyme, carrots, potatoes, and mushrooms.
- Slow cook: Cover and cook on LOW for 8 hours, until beef is tender.
- Finish & serve: Taste and adjust seasoning. Garnish with parsley if desired. Serve in bowls, over mashed potatoes, or with crusty bread for dipping.
