Slow Cooker Beef and Potato Gratin

Ingredients:

Ground beef 1 lb
Russet potatoes, peeled and sliced ¼-inch thick 3 lbs
Small white onion, thinly sliced 1
Garlic, minced 2 cloves
Dried thyme 1 teaspoon
Grated cheddar cheese 3 cups
Chicken broth ½ cup
Worcestershire sauce 1 tablespoon
Kosher salt To taste
Freshly ground black pepper To taste

Instructions:

  1. Brown Ground Beef: In a skillet over medium-high heat, season the ground beef with salt and pepper. Cook until it’s browned and fully cooked through. Drain any excess fat if needed, then set the cooked beef aside.
  2. Layer First Half: Arrange half of the sliced potatoes evenly in the insert of your slow cooker. Season this layer with salt and pepper. Top with half of the thinly sliced onions, half of the minced garlic, half of the dried thyme, and half of the cooked ground beef.   3. Layer Second Half: Repeat the layering process once more: add the remaining potatoes, salt and pepper, onions, garlic, thyme, ground beef, and finally the remaining cheddar cheese.
  4. Add Liquid: In a small bowl, whisk together the chicken broth and Worcestershire sauce. Pour this mixture evenly over the top of the layered ingredients in the slow cooker.
  5. Slow Cook: Cover the slow cooker with its lid and cook on high for 4 hours, or until the potatoes are tender and the cheese is melted and bubbly.
