Slow Cooker 4-Ingredient Mushroom Beef Tips

This Slow Cooker 4-Ingredient Mushroom Beef Tips recipe is a masterclass in “low-effort, high-reward” cooking. By using condensed soup and dry onion mix, you’re essentially creating a braising liquid that seasons the beef from the inside out while it tenderizes. The mushrooms at the bottom serve a dual purpose: they act as a “trivet” to prevent the beef from scorching and release their natural moisture to turn that thick soup into a silky, savory gravy.

| Ingredient | Amount |
| Beef stew meat or sirloin tips (1.5-inch chunks) | 3 lbs |
| Condensed cream of mushroom soup | 2 (10.5 oz) cans |
| Dry onion soup mix | 1 (1 oz) packet |
| Sliced mushrooms (White button or Cremini) | 1 (8 oz) package |
Directions:
Step 1: The Mushroom Bed: Lightly grease a 4–6 quart slow cooker. Scatter the sliced mushrooms across the bottom.

Tip: Using Cremini (Baby Bella) mushrooms instead of white button mushrooms will give the gravy a deeper, earthier color and a slightly meatier texture.

Step 2: Layer the Beef: Place the beef chunks directly on top of the mushrooms. Try to keep them in a relatively even layer so the heat penetrates the meat consistently.
Step 3: The Gravy Concentrate: In a separate bowl, whisk the cream of mushroom soup and the dry onion soup mix together. Pour this over the beef and spread it to the edges.
Important Note: Do not add any extra water or broth! It will look very thick initially, but as the beef and mushrooms cook, they will release plenty of liquid to create a perfect gravy consistency.
Step 4: The Long Simmer: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours. You’ll know it’s ready when the beef is “fork-tender” and gives way with very little pressure.
Step 5: The Thickening Rest: Turn the slow cooker to WARM and let it sit for 10/15 minutes.
Tip: This resting period allows the proteins in the meat to relax and the starch in the soup to set, resulting in a much thicker, glossier gravy that clings to your side dishes.
