  1. Melt the butter in a saucepan over low heat.
  2. Whisk in the all-purpose flour and stir continuously until it is fully incorporated and smooth. Cook for 1 to 2 minutes, stirring often, until the mixture turns a light golden color. This creates a roux.
  3. Gradually whisk in the whole milk. Increase the heat to medium and cook for about 2 minutes, or until the sauce thickens, stirring frequently to prevent lumps from forming.
  4. Reduce the heat to low and add the shredded sharp cheddar cheese to the sauce.

Directions for the Sandwiches

  1. Arrange the toasted sourdough bread slices on a baking sheet lined with parchment paper or foil.
  2. On top of each slice of toasted bread, layer 3 to 4 slices of cooked turkey breast.
  3. Place 2 slices of patted-dry beefsteak tomato on top of the turkey on each sandwich. Sprinkle the tomato slices with a very small pinch of salt.
  4. Divide the warm cheese sauce evenly among the four sandwiches, pouring it generously over the turkey and tomatoes.
  5. Top each sandwich with 2 slices of crispy cooked bacon.
  6. Set your oven to low broil.
