Shoepeg Salad

Ingredients:

White or shoe peg corn, drained 3 cans
Large cucumber, diced 1
Tomatoes, diced 2
Red bell pepper, diced ½
Green onions, chopped 5

For the Dressing:

Dressing Ingredients Quantity
Mayonnaise ⅔ cup
White vinegar 1 ½ tablespoons
Granulated sugar 1 tablespoon

Instructions:

  1. Combine Salad Ingredients: In a large bowl, combine the 3 cans of drained corn, 1 diced large cucumber, 2 diced tomatoes, ½ diced red bell pepper, and 5 chopped green onions.
  2. Make the Dressing: In a small bowl, mix together the ⅔ cup of mayonnaise, 1 ½ tablespoons of white vinegar, and 1 tablespoon of granulated sugar until the ingredients are well incorporated and smooth.
