Ingredients:

| Sugar | 1 teaspoon | 
| Beef broth | 8 cups | 
| Dry white wine (optional) | 1/2 cup | 
| Bay leaf | 1 | 
| Fresh thyme leaves | 1 teaspoon | 
| Salt and pepper | To taste | 
| Baguette, sliced | 1 | 
| Gruyère cheese, shredded | 2 cups | 
Instructions:
- Caramelize the onions: In a large pot, melt butter and olive oil over medium heat. Add onions and cook, stirring frequently, for 10-15 minutes until softened. Sprinkle sugar and cook for 30-40 minutes until deeply caramelized and golden brown.
 - Deglaze the pot: Add dry white wine and let simmer for 2-3 minutes until mostly evaporated.
 - Add broth and herbs: Pour in beef broth, add bay leaf and thyme, and bring to a simmer. Let simmer for 20-30 minutes. Season with salt and pepper.
 - Prepare the baguette: Preheat oven to 400°F. Toast baguette slices until golden and crispy.
 - Assemble and broil: Ladle soup into bowls. Top with toasted baguette slices and shredded Gruyère cheese. Broil for 3-5 minutes, or until cheese is melted and bubbly.
 - Serve hot: Garnish with thyme if desired. Serve hot with extra bread for dipping.
