This classic French comfort food is a hearty and flavorful soup, perfect for a chilly day. The caramelized onions, rich broth, and melted cheese create a truly satisfying dish.

Ingredients:

Ingredient Quantity
Yellow onions, thinly sliced 4 large
Unsalted butter 3 tablespoons
Olive oil 1 tablespoon
Sugar 1 teaspoon
Beef broth 8 cups
Dry white wine (optional) 1/2 cup
Bay leaf 1
Fresh thyme leaves 1 teaspoon
Salt and pepper To taste
Baguette, sliced 1
Gruyère cheese, shredded 2 cups

Instructions:

  1. Caramelize the onions: In a large pot, melt butter and olive oil over medium heat. Add onions and cook, stirring frequently, for 10-15 minutes until softened. Sprinkle sugar and cook for 30-40 minutes until deeply caramelized and golden brown.
  2. Deglaze the pot: Add dry white wine and let simmer for 2-3 minutes until mostly evaporated.
  3. Add broth and herbs: Pour in beef broth, add bay leaf and thyme, and bring to a simmer. Let simmer for 20-30 minutes. Season with salt and pepper.
  4. Prepare the baguette: Preheat oven to 400°F. Toast baguette slices until golden and crispy.
  5. Assemble and broil: Ladle soup into bowls. Top with toasted baguette slices and shredded Gruyère cheese. Broil for 3-5 minutes, or until cheese is melted and bubbly.
  6. Serve hot: Garnish with thyme if desired. Serve hot with extra bread for dipping.
