- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

- Heat olive oil in a large skillet over medium heat. Cook chopped onion until translucent, approximately 5 minutes. Add minced garlic and cook for an additional minute.
- Stir in diced carrot and celery, cooking until vegetables are tender, about 5-7 minutes.
