This quick, savory skillet meal features sliced pre-cooked chicken or turkey sausage cooked with softened onions and bell peppers, seasoned with Italian herbs and a touch of balsamic vinegar.

Sausage Peppers And Onions

Ingredients:

INGREDIENTS AMOUNT
Yellow onions, peeled and sliced into rings 6 cups (~1/1/2 large onions)
Large bell peppers, sliced (about 1/4 inch thick) 2 (4 cups)
Fully cooked reduced-fat chicken or turkey sausages 1 package (12 ounces, 4 sausages)
Olive oil, divided 3 teaspoons
Dried oregano 1/4 teaspoon
Dried basil 1/4 teaspoon
Salt and freshly ground black pepper To taste
Fresh garlic, minced 2 teaspoons
Balsamic vinegar 1 tablespoon
Cooking spray As needed

How To Make Sausage Peppers And Onions:

Step 1: Soften Veggies: In a large microwave-safe bowl, add the 6 cups sliced onions and 4 cups bell peppers. Cook on high in the microwave for 8-10 minutes, until the vegetables are soft.

Step 2: Brown the Sausage: In the meantime, cut the 4 sausages into thin slices, about 1/4 inch thick. Coat a large, nonstick pan with cooking spray. Add the sausage slices and cook until slightly browned, about 5 minutes. Stir often. Remove the sausages to a plate.

Step 3: Sauté Veggies: In the same pan, coat again with cooking spray. Add 2 tsp of the olive oil. Add the microwaved onions and bell peppers, 1/4 tsp oregano, 1/4 tsp basil, and a little salt and pepper. Cook over medium-high heat, stirring often, until the vegetables are soft and slightly caramelized, about 10 minutes.

Tip: If the pan gets too dry, add the remaining 1 tsp of olive oil and 2 tbsp of water.

Step 4: Combine: Add the 2 tsp minced garlic and cook, stirring, until fragrant and soft (about 1 minute). Return the sausages to the pan. Add 1 tbsp of balsamic vinegar. Mix everything together and continue to cook, stirring, until warmed through and well blended (about 2 minutes).

Step 5: Serve: Arrange the sausages, peppers, and onions on a platter. Serve with mustard on the side and toasted bread or rolls, if desired.
