Ingredients:

Ingredient Quantity
Ground breakfast sausage 1 pound
Cheddar Cheese (shredded) 1 cup
Large eggs 4
Bisquick Baking Mix 1 cup

Instructions:

  1. Cook the sausage: Brown the ground breakfast sausage in a skillet over medium heat on the stovetop. Cook until it is fully cooked through and no longer pink. Drain off any excess fat from the skillet.
  2. Preheat oven and prepare muffin pan: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin pan thoroughly with cooking spray or butter.
  3. Combine wet and dry ingredients: In a large mixing bowl, combine the large eggs, shredded Cheddar cheese, and Bisquick Baking Mix. Whisk all the ingredients together until they are well combined and the mixture is smooth.
  4. Stir in sausage: Add the pre-cooked and drained sausage to the egg and Bisquick mixture. Stir until the sausage is evenly distributed throughout the batter.
  5. Fill muffin cups: Spoon the sausage and egg mixture into the prepared muffin cups, filling each cup about ¾ of the way to the top.
  6. Bake: Bake in the preheated oven for 18 to 20 minutes, or until the muffins are golden brown and set in the center. A toothpick inserted into the center of a muffin should come out clean.
  7. Cool and serve: Remove the muffin pan from the oven and let the Sausage Muffins cool in the pan for a few minutes before transferring them to a wire rack to cool slightly further. Serve warm and enjoy! These muffins are great on their own or with a side of fruit.
